Creamy Butternut Squash Soup

Today it finally felt like fall has really come. Although the leaves have been changing colors, it keeps getting warm again! This morning I woke up with a chilly nose and bundled up in a cosy sweater. It was also the season’s last farmer’s market on Daley Plaza, very bittersweet indeed. I left with two butternut squashes, a loaf of french bread and a bucket worth of various spicy little peppers because all I wanted for lunch was some butternut squash soup.

I came home without the ingredients necessary for any soup recipe I could find. So, I threw in a little of this and a little of that and ended up with a deliciously spicy makeshift soup. It would also be wonderful for trying to ward off a cold. Ginger, garlic, peppers and apple cider vinegar work wonders for that.

Creamy Butternut Squash Soup

2 medium sized butternut squashes, peeled and quarted
2 cloves garlic, chopped
2Tbsps fresh ginger
2Tbsp olive oil
2 cups vegetable broth
1/2 can coconut milk
1 serrano pepper
1tsp apple cider vinegar
Pepper and salt to taste

1. Roast the squash. The easiest way is to cut it into quarters, peel it, then smother it in olive oil. Place it face down on a cookie sheet and bake for 45 minutes at 400. You know it’s done when you can easily stick a fork through it.

2. When there’s about 5 minutes left for the squash, saute garlic, ginger and seranno pepper in a bit of olive oil in a big pot. When the squash is done, add it to the mixture along with the vegetable broth and coconut milk. Bring to a boil, reduce heat, and let simmer for 20 minutes.

3. If you have an immersion blender, use it. If you’re like me, transfer it (slowly! it’s hot!) to a food processor and blend until creamy. Mix in the apple cider vinegar then add salt and pepper to taste.

Only a little over a week until Vegan MoFo begins! I’ve pledged to blog every day with food related posts.  I’ll be starting a day late because I’ll be driving back from D.C. from THE RALLY TO RESTORE SANITY the day it begins. D.C. to Chicago is a 12+ hour drive, so blogging is just not gonna happen. I will, however, post lots of awesome pictures from the rally and halloween! I’m going as Christine O’Donnell, complete with a chastity belt and witches hat. But, I still promise a month of food. And next time, I’ll take some pictures.
